The shoulder petite tender is the beef cut from the shoulder clod subprimal. It’s the smallest muscle in the shoulder clod, which closely resembles the tenderloin in shape. Shoulder petite tender is very lean, flavorful, and quite tender, though not as tender as the tenderloin, but it comes at a lower cost. You can cook it whole or slice it into small steaks similar in shape to filet mignon.
