Flank Primal
The flank primal is a small section of beef located just below the loin primal. It yields one cut: the flank steak. This cut is relatively large, flat, and medium in thickness, with a coarse grain. Flank steak is one of the best cuts of beef – it’s lean, very flavorful, and relatively tender when cooked properly and sliced thinly against the grain. It’s perfect for quick, high-heat cooking, but is also one of the more expensive cuts of beef.
