Chuck Short Ribs – Subprimal Cut
The chuck short ribs are a fabricated beef cut from the chuck primal, specifically from ribs one through five in the front section, located just above the brisket and shank. They’re known for being very meaty and well-marbled, which makes them juicy and full of rich beef flavor when cooked properly. Since there’s plenty of meat on each rib, chuck short ribs are a perfect choice when cooking for larger groups. Keep in mind that they don’t do well with quick, high-heat cooking.
